carrot cake oatmeal cream pie cookies
a warm, soft chewy carrot cake oatmeal cookie sandwiched with vanilla cream cheese frosting.
these cookies are like the little debbie oatmeal cream pie cookie but BETTER cuz who doesnt love carrot cake?!






ingredients:
1/2 cup unsalted butter softened
½ cup brown sugar
½ cup granulated sugar
2 tsp bourban vanilla bean paste
1Â egg
1Â cup all purpose flour
¼ teaspoon baking soda
½ teaspoon baking powder
1 tsp cinnamon
1 cup old fashioned rolled oats
3/4 cup finely grated carrots
Cream cheese frosting:
6 oz cream cheese, softened
2 tablespoons unsalted butter, softened
1/2 cup- 1 cup powdered sugar (add more if needed)
1 tsp vanilla
Directions:
Line a tray with parchment paper
In a bowl, beat together the butter and sugar and mix until creamy.
Add in the egg and vanilla
In a sep bowl, add in the dry ingredients together and give it a whisk
Add the flour mixture to the butter mixture and fold together.
Add in the grated carrots!
Chill the dough for about 30 minutes.
preheat oven to 350f
Scoop about a tbsp of dough and gently press a little bit down.
Bake for 10-11 minutes.
Let it cool and make the frosting!
Beat together the cream cheese, vanilla, sugar and butter.
Add frosting to a piping bag and swirl it on one side of the cookie and top with another cookie to make a sandwich!
