This lemon loaf is super moist, fluffy and soft. This will now be my go to lemon loaf! Packed with lemon flavor and NOT dry!

Ingredients:
Loaf:
165g all purpose flour
24g cornstarch
Pinch of salt
1 tsp baking powder
226g unsalted butter (softened)
170g granulated sugar
2 tbsp lemon zest
2 tsp vanilla bean paste
1 tsp lemon extract
2.5 tbsp fresh lemon juice
4 large eggs (room temp!)
60g greek yogurt (room temp!)
Glaze:
70g powdered sugar
1 tbsp lemon juice
Instructions:
Preheat oven to 350f, line a 9x5 loaf pan.
In a bowl, add in your granulated sugar and lemon zest. Use your fingers to rub together and let it sit for 5 minutes.
In another bowl, add the flour, cornstarch, pinch of salt, and baking powder. Mix well and set aside.
Then add in the softened butter and use a hand mixer to mix until its fluffy.
Add in the eggs ONE at a time and beat. Then add in the vanilla bean paste, lemon extract and lemon juice.
Add half of the flour mixture and half of the greek yogurt. mix until you see less clumps.
Add in the rest of the flour mixture and greek yogurt and mix until smooth. Do not overmix it!
Pour batter into the lined loaf pan and bake for 50-55 minutes!
While that’s baking, make the glaze by mixing together the powdered sugar and lemon juice.
