marshmallow fluff cookie
In honor of National Fluffernutter day here is the cookie recipe to make! These chewy marshmallow fluff cookies have all the nostalgic flavors. These cookies have the perfect peanut butter flavor, crispy on the edges and chewy on the inside. The marshmallow fluff is swirled into the cookie creating the perfect texture.

ingredients:
113 g unsalted butter
100 g @justins creamy peanut butter
100g brown sugar
50g granulated sugar
1 large egg
1/2 tbsp vanilla bean paste
145g all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
60 g marshmallow fluff
directions:
In a large bowl, add in the unsalted softened butter and sugar. Mix on medium speed until combined and fluffy.
Add in the egg and vanilla bean paste. Mix until the color has lightened.
Next, add in Justins creamy peanut butter. Mix at a medium speed until the peanut butter is well incorporated.
Then, add in your dry ingredients. Add in the flour, baking soda, baking powder, and salt. Use a rubber spatula to fold everything together.
Use a small cookie scoop and add dollops of marshmallow fluff on top of the dough and fold it in. Be careful and mix it just enough to see streaks. Do NOT over mix.
Cover your dough and let it chill in the fridge for 3 hours or until firm. The cookie will be soft.
Preheat the oven to 350f.
Once the dough has chilled, use a 2oz cookie scoop to scoop the dough.
Scoop onto a parchment lined cookie sheet.
Bake for 12-14 minutes.
after they come out of the oven use a large cookie cutter to scoot the cookies into the middle to round the edges.
