I want to start documenting some highlights and lovely moments of my week.
I’m back to my daily routine after a long weekend..

My favorite dinners i made this past week:
FAJITAS. love love love this meal. prep the chicken the day before! just cut them into small strips and add some mirin and salt. ( i add mirin to get rid of that chicken smell! it def removes alot of that chicken smell) next day just pan fry it and add fajita seasoning with freshly cut bell peppers. topped it with cheddar and gruyere cheese. i blowtorched it for a few seconds to get that cheese to melt plus it adds a great smoky flavor. I also have been loving the homemade garlic naan with it. it just pairs well together HAHA. i will be dropping the recipe for the naan soon when i make it again! its so fluffy and soft.

Korean fried chicken!!

Over trial and error this recipe is what ive been sticking to! My hubby and I were craving korean fried chicken but the closest one to us that’s good is 20 min away.. i was feeling lazy and so i made it at home but it was even better. we killed it.
wet batter:
85g potato starch
30g all purpose flour
1 egg
1 tsp baking powder
120g cold water
dry batter:
85g potato starch
30g all purpose flour
1 tsp salt
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
i made the sauce on the side to dip the chicken in. i like when the chicken stays crispy and i dunk it in sauce.
the soy garlic sauce:
3 tbsp light soy sauce
1 tbsp honey
1 tbsp minced garlic
1-3 tbsp water
1 tbsp mirin
for the soy sauce i put it in a sauce pan and let it simmer slowly.
yangnyeom sauce:
2 tbsp ketchup
2 tbsp gochujang
2 tbsp honey
4 tbsp water
2 tbsp light soy sauce
2 tsp rice vinegar
1 tbsp minced garlic
i mixed all of this in a saucepan and let it simmered until slightly thickened.
steps:
i cut up my 1-2lbs of chicken thigh and seasoned with salt, garlic powder, and onion powder.
i dipped each chicken into the wet batter first and then to the dry batter. evenly coat and shake off excess and deep fry!

I am super duper excited for all the fall recipes soon. I have been filming all weekend. Pumpkin, apples, and warm spices.. my FAVORITE.
My kitchen smells like cozy warm cinnamon and I could not be more happier. But sadly it’s still 100 degrees out here LOL:(
Been getting back on books! I just finished “ If he had been with me” and that was a heavy one. It was a beautiful book. Lots of tears were shed.
Soaking up the last moments of summer until we step into fall:)
