brown butter blueberry blondies
A chewy brown butter blondie base with wild blueberries and a crunchy streusel top.
To me, I think a blondie should be SUPER fudgy and moist. Buttery and chewy. This one has wild blueberries & brown butter.
I could eat endless amount of these!
ingredients:
brown butter blondies:
136 g unsalted butter
140 g granulated sugar
30g brown sugar
2 tsp vanilla bean paste
2 large egg room temperature
Pinch of salt
160 g all-purpose flour
120 g blueberries frozen + ½ teaspoon all-purpose flour
100 g white chocolate chips or chopped white chocolate
streusel:
49g unsalted butter cold
60g flour
30g granulated sugar
instructions.
Make the streusel first:
In a bowl, add the unsalted butter, flour, and sugar. Use your hands to mix until crumble consistency. Place in fridge.
In a sauce pan, melt the butter and let it simmer on medium heat and swirl with a spatula until browned.
Pour the brown butter in a bowl. preheat oven to 350f.
Let it cool until the butter is warm. Then add in the brown sugar and granulated sugar.
Add in the vanilla bean paste and use a hand mixer to mix well.
Add in the eggs one at a time and mix for a good 2 minutes. Batter should be lighter and smooth.
Add in the flour and pinch of salt. Use a spatula to fold everything together. When your halfway, add in the frozen blueberries. Fold the rest and pour batter into a baking pan. ( I used 7x7)
Top the batter with the streusel.
Bake for 25-30 min
on what step do i add the chocolate?
Can you use fresh blueberries and would it change the amount?
