banana biscoff cake
This banana biscoff cake is super light, moist and fluffy. It has a layer of biscoff brown sugar struesel and topped a a sweet biscoff glaze on top.
It’s so soft and tender with a gorgeous caramelized biscuit flavor!











we cook this cake at a low temp for a longer time to result in that super soft cake.
banana cake:
225g bananas (2 medium bananas )
113g unsalted butter
60g greek yogurt
170g granulated sugar
2 large eggs
1/2 tbsp vanilla bean paste
180g buttermilk
1/2 tsp baking soda
300g All purpose flour
1 tsp cinnamon
Biscoff crumble:
60g Biscoff crumbs
20g all purpose flour
1 tsp cinnamon
100g brown sugar
glaze:
50g Biscoff cookie butter softened
1 tsp vanilla extract
120g powdered sugar
3-4 tbsp milk
Directions:
Make the crumble first:
combine the biscoff crumbs, flour, cinnamon and brown sugar. mix evenly and set aside.
Preheat oven to 300 f and line a 9x9 square pan
in a medium sized bowl, whisk together the flour, cinnamon and baking soda. set aside.
in a large bowl, use a hand mixer to mix the banana and softened butter. mix until well combined.
add in the sugar and mix again.
add in the egg and mix one at a time.
add in the vanilla bean paste and greek yogurt. whisk again.
Add dry mixture and buttermilk and alternate between each other
Do not over mix! mix can look a little clumpy.
Place half of the batter into the pan. Pour the biscoff streusel on top and lightly pat down. Pour the remaining batter over the top and top with more streusel.
Bake for 1 hour and 10-15 minutes. Should be nice and golden on top! toothpick should come out clean
make the glaze: When the cake is almost cool, make the glaze by softening cookie butter. Place in a microwave heat safe bowl and heat until softened about 15-20 seconds. Stir and check every 5 seconds.
Add vanilla, powdered sugar, and milk. Whisk until smooth and thick, but pourable consistency.
Pour over cooled cake and garnish with final 1/3 of streusel.
