bakery style chocolate chip muffins
a moist chocolate chip muffin you would find at your local fav bakery<3
These are the BEST chocolate chip muffins! They are exactly like the ones you find in a bakery. This makes 6 muffins (small batch).
They are super moist, fluffy and buttery. we hate dry muffins here.
ingredients:
150g all purpose flour
90g granulated sugar
1 1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1 large egg
1 tsp vanilla bean paste
1/8 tsp cake batter extract (optional but adds a nice flavor!)
120g buttermilk
60g butter (melted)
2 tbsp avocado oil
2 tbsp greek yogurt
170g mini chocolate chips
Instructions:
In a bowl, mix together the dry ingredients. (Flour, sugar, baking powder, baking soda, and salt. Whisk until well incorporated.
In a separate bowl, add in the melted butter, oil, greek yogurt, egg, vanilla paste and cake batter extract. Mix until well combined. Slowly stir in the buttermilk.
Add the dry ingredients into the wet ingredients and whisk. Do not over mix!! Just until you see no flour streaks. Add in the mini chocolate chips and give it one more fold.
Cover the batter for 30min- 1 hour. Let it rest. This helps it to poof up during baking!
Preheat oven to 425 f.
Line your muffin tin. I lined every other spot. Scoop the batter into the muffin liner. Bake for 8 minutes. Then reduce the temperature to 350f and bake for another 10 minutes.
Remove and let ur muffin cool!
